This Thai Street Chicken looks like an awesome recipe to have for lunch or dinner! If you are craving something simple and fresh, than this recipe will be a good one to try out. Marinated and grilled chicken accompanied by fresh raw vegetables and sweet chilli sauce for dipping them all into... sound like the perfect meal to me. All that needs to be done is mixing up the simple marinade and allowing the chicken thighs to marinate for 30 mins, so make sure you prepare enough time ahead for that part, and then just grill them up on the BBQ!

This would also make a great appetizer at a BBQ or gathering. You could make it before hand and have it ready to grill up on the BBQ for all the guests. Typically, this dish is served as street food in Thailand, hence the name, Thai Street Chicken. Thai food seems to be very high in vegetable content and loves to use the sweet and spicy and savoury flavours for the most part. I have never personally been to Thailand, but I enjoy food from Thai restaurants, and I love it because they always seem to use fresh and healthy ingredients.

This recipe could also be turned into a salad form if you like, you could just use the dipping sauce as a dressing and drizzle it lightly over all of the ingredients. I am totally going to make this chicken soon! Some of the ingredients you will need for this Thai Street Chicken recipe include cilantro roots, palm sugar, white pepper, fish sauce, oyster sauce, and grated garlic. You will also need some boneless, skinless chicken thighs, julienne carrots, sliced cucumbers, cilantro sprigs, and limes cut into wedges.

To start the Thai Street Chicken recipe start the charcoal grill to low heat, to create a slow and even bed of coals. Then make the marinade. Place the cilantro roots into a large ziplock bag, and seal. Add the sugar, the white pepper, some fish sauce, oyster sauce, and garlic to the bag and combine. Add the chicken thighs, and massage until mixed. Seal and refrigerate for approximately 30 minutes. Then remove the chicken from the bag, and throw away the marinade. Then skewer the chicken, using flat and long stainless steel skewers, thread the chicken thighs so they are flat, and similar to a Middle Eastern style kebab. Then using a non stick cooking spray, spray and wipe down the grill grates. Then grill. Place the chicken skewers on the hot grill. Grill for approximately 15 minutes. Be sure to flip and grill on each side for approximately 15 minutes, or until the chicken can be easily pulled off. Then remove the chicken and put on a platter, and let sit for ten minutes. Slide the thighs off of the skewers and put on the platter on one side. Then on the other side, of the platter line up carrots, cilantro, cucumbers and lime wedges, and serve with dipping sauce.
