Tomato Salad with Goat Cheese and Pine Nuts

This tomato salad with goat cheese is made with summer heirloom tomatoes served simply with crumbled goat cheese, toasted pine nuts, fresh herbs and olive oil making for a wonderful light meal or side dish. This colorful salad looks great too! You ca tailor this salad to meet your tastes and the exact measurements really aren't important. You can feel free to use fresh mozzarella instead of the goat cheese if you'd prefer, and in this version of the salad recipe basil was used, but oregano, chives, mint or a combination of all of them works too. You want to be sure however to stick to the essential salad equation, meaning seasonal veggies and or fruit, with cheese and nuts. If you have all three of these your salad is going to be great, you can dress this tomato salad with goat cheese and pine nuts recipe with your favorite homemade or store bought vinaigrette or you can just simply use a quality olive oil. To toast the pine nuts, just place them in a small ungreased skillet set over medium low heat. Toast for about 5 minutes, stirring occasionally so they don't burn. Let cool.
