This Oreo lava cakes recipe combines a warm chocolate cake recipe, with an oozing cookies and cream pudding center. This easy cake recipe doesn't need any mixers and is an excellent way to satisfy your sweet tooth during the colder months or any time of year for that matter! This lava cake recipe is a simplified recipe version that makes just four lava cakes. The ingredients you will need for the cake recipe include chopped semisweet chocolate, low-fat milk, all-purpose flour, baking powder, baking powder, and vegetable oil. The recipe ingredients you will need for the filling recipe include instant Oreo pudding mix and low-fat milk.

To start, in a small bowl, combine the pudding mix and the cold milk. Then beat with a whisk until the ingredients are completely smooth, and no lumps remain. Then let the cake mixture stand at room temperature for approximately five minutes. This should thicken the ingredients into a pudding. Then preheat the oven to 350 degrees Fahrenheit. And prepare four ramekin dishes by spraying with them with some non-stick cooking spray and then with flour. If you don't have a non-stick cooking spray, you can also grease the inside of the ramekins, and sprinkle generously with flour. Then tap the ramekins to get rid of excess flour.

Next in a large mixing bowl, add the chopped chocolate and milk. Then microwave for about one minute making sure to cover the bowl with a microwave-safe paper towel. Then stir the ingredients with a whisk until the chocolate is mostly melted. Then microwave again for another minute and stir until the melted chocolate is completely uniform. You can also melt the chocolate with some milk on the stove, over a pot of simmering water. Then add the remaining cake ingredients, and whisk until batter is completely smooth. Then add the batter into the prepared ramekins, until they are about half full. Then add two some of the Oreo pudding to the center of each ramekin. And evenly divide any remaining batter between the four ramekins, making sure to cover completely the Oreo filling. The lava cakes will not rise too high during baking, so if they are about two-thirds, to three-quarters full, that is fine. Next, place the ramekins on a baking sheet. Bake for approximately 17 to 18 minutes, or until the surface of the lava cakes are just set.

Then remove the lava cakes from the oven. Using a small spatula to loosen the sides of the lava cakes from the ramekins. Then place a small plate on top of each ramekin. Then very quickly, invert the plate with the ramekin, so that the plate is on the bottom and the ramekin is upside down on top. Then when you lift up the ramekin, the lava cake should be on the plate. Repeat this technique with the remaining ramekins. Serve immediately.
