This melt-in-your-mouth White Cake with Cranberry Filling and Orange Buttercream recipe will be the highlight of any dessert table, no matter what time of year it is. The combination of this delicious white cake recipe, with cranberries and orange buttercream, take this dessert recipe over the top! The ingredients you will need for the filling recipe include cherry preserves, granulated sugar, fresh orange juice and fresh cranberries (frozen cranberries can also be substituted). The ingredients needed for the buttercream recipe include softened butter, softened cream cheese, salt, powdered sugar, fresh orange juice, vanilla extract and milk (optional). To prepare the filling recipe bring the first three ingredients and some of the cranberries to a boil in a medium pot over medium-high heat. Boil, making sure to stir often, about 5 to 6 minutes or until the cranberries start to pop. Then transfer some of the cranberry mixture to a small bowl, and stir in rest of the whole cranberries. Then transfer the rest of the remaining hot cranberry mixture to another small bowl. Let both mixtures cool for about an hour. Cover and chill about 8 hours. To make the buttercream recipe beat the butter and next two ingredients at medium speed with an electric mixer for about 1 to 2 minutes or until creamy. Then gradually add the powdered sugar alternately with the orange juice. Beat on low speed until blended and smooth after each addition. Stir in the vanilla.
