Are you ready to bake the best molasses cookies you've ever tried? This cookie recipe is sure to please leaving everyone with a warm and comforting feeling that they've just had a satisfying bite of gooey greatness.

Molasses is one of those ingredients that we all often leave at the back of our pantries or just don't bother to use at all unless a holiday inspired recipe demands for it. Its a shame really, because molasses is not only a great white sugar substitute, but its also really good for you! I often buy blackstrap molasses from the natural health food store - though its not hard to find in any major grocery store these days - and when I'm feeling a bit low in minerals and iron, I start my day with a healthy spoonful. Molasses is also great if you're having some issues with regularity. Its safe to use and definitely does the trick! Did you know that molasses is a by-product of refining sugarcane? Molasses is full of good vitamins like calcium, iron and magnesium.

I love baking with molasses because it gives an almost caramel richness to any baking recipe. It also holds in moisture which is why this cookie recipe yields cookies which are gooey and definitely oh-so very-good! Combined with those holiday spices - cinnamon, nutmeg, cloves, all-spice...Mmmm...so how much longer until Christmas again? Its that fresh-out-of-the-oven smell that will make these wonderful treats disappear before they even get into the cookie jar. For those that do make it passed the cooling rack, you can keep them in a jar for a few days and they will still hold onto their moisture and gooey bite!

I like to bake these off in class round medallions but if you are baking with the kids, its always nice to try some fun shapes with different coloured sugar sprinkles. Why not? Go on and search in your pantry closet or look deep into your food drawers, I am sure you'll find a carton or two of molasses. Happy baking and enjoy! Soft molasses cookies are popular at Christmas, but you can enjoy them anytime of year.

This soft molasses cookie recipe is so easy to do, you'll want to try it more often. To start you cream together the brown sugar and shortening, then stir in the egg and molasses and mix together well. Then you fold in the dry ingredients and stir them together. Now cover and chill the mixture until firm approximately one to two hours. Preheat the oven to 350 degrees Fahrenheit. You can roll your dough into small balls and then rollin the white sugar. Place the cookie balls on a lightly greased cookie sheet. Bake the cookies for approximately 9-10 minutes. Afterwards leave the cookies on the baking sheet for about one minute so they can set. The creator of this soft molasses cookie recipe adjusted the amount of salt in the recipe as some people felt it was too much (one teaspoon). She adjusted it to half a teaspoon. So it is up to you the amount of salt you prefer.
