When I first read the name of this recipe, I have to be honest, I wasn't quite sure what to expect. Making a whole pineapple stuffed with pork and wrapped in bacon sounds a little intimidating, but delicious all at the same time. Once I read the recipe through, I found out that It is actually exceptionally simple to make this recipe, even though it sounds like it might be complicated. The sauce is the perfect combination of savoury, salty, spicy, sweet and sour, all balanced so nicely. This makes it great with the pineapple and the pork and bacon. To make this awesome meal, all you have to do is hollow out a full pineapple, cram as much of the pork ribs as you can fit inside, then place the bacon strips on the outside of the pineapple and finally pour the entire bottle of dressing all over the final product. The juices from the pineapple will tenderize the meat, so you'll have the most amazingly juicy pork so long as you don't over cook it. There are so many people that would love this recipe, but especially people who love their bacon. The bacon would make for a really nice smokey and salty flavour, then the pineapple would be nice and sweet, with the pork ribs smothered in the nice, well rounded sauce. Sounds like a great combination. You could serve it with some salad of course, or some grilled corn on the cob. Maybe some nice potatoes would be good on the side. Or maybe some rice to soak up the sauce.
