There is something about Chocolate Whoopie Pies that make us feel like kids again, the soft chocolate cake that surrounds the creamy filling is always a treat to enjoy. We are not too sure if it's a cookie, cake or pie recipe but it doesn't matter, all we know is that they are always good!

While the whoopie pie origins are not completely sure, it is said they are from New England and a Pennsylvania Amish tradition. The story says that Amish women used to bake the sweet cake recipe and then put them into the farmer's lunch boxes and lunch pails. When the farmers would find the cake treat in their lunch pails, they would shout out "Whoopie!" It is thought that the original whoopie pie recipes were made from cake batter leftovers. The whoopie pie is the official state treat recipe of Maine. Some of the ingredients you will need for the chocolate whoopie pie cake recipe include all-purpose flour, sugar, buttermilk, unsweetened cocoa powder, and egg. You will also need vanilla extract, baking soda, and salt. For the filling recipe, you will need vegetable shortening, powdered sugar, marshmallow fluff, and vanilla extract.

To start preheat the oven to 350 degrees Fahrenheit. Line two baking pans with some parchment paper or non-stick cooking spray. In a bowl combine the flour, cocoa powder, baking soda, and salt. Then in another bowl, cream together the butter and sugar. When the mixture is light and fluffy, you can add the vanilla and egg. Alternate between adding the dry ingredients with that of the buttermilk to the egg mixture. Scrape down the sides of the bowl and incorporate everything well. You can use an ice cream scoop or tablespoon, and spoon equal amounts of the cake batter onto the baking pan. Then place into the oven and bake for approximately 12-15 minutes. The tops should be puffed up, and a toothpick inserted should come out clean. When done, transfer to a wire rack to cool.

To make the filling recipe beat the vegetable shortening and the marshmallow fluff together in a bowl. Then slowly add the powdered sugar and vanilla extract. When the whoopie pies are cooled, you can spoon the filling onto the flat side of the cake, and top with a second cake to create little cookie sandwiches. You can sprinkle the whoopie pies with some powdered sugar. You can serve immediately or wrap the whoopie pies in some plastic wrap to keep fresh.
