This homemade cream sauce is a little different than your typical alfredo and you're going to love it! Start by bringing a large pot of salted water to a boil, and cooking the fettuccine pasta according to the package directions, till al dente. Then drain pasta, and reserve some of the cooking water, and set the pasta aside. Heat some olive oil in a large skillet over medium-high heat and saute some shallots until tender approximately two to three minutes. Then add some garlic and some salt and pepper, while stirring the so the garlic does not burn. Then add the sliced mushrooms and peas and cook until the excess moisture in the mushrooms evaporates, and they become softened. Evenly put the flour over the vegetable in the skillet and stir so that all the vegetable are evenly coated. Pour some of the vegetable broth and some of the reserved cooking water into the skillet and bring to a boil. Cook until this mixture reduces and thicken, then remove the skillet from the heat and stir in the heavy cream and the parmesan cheese. After tasting, you can adjust the seasoning if necessary. Add the fettuccine pasta to the sauce and stir to coat. If you find that the sauce recipe is too thick, you can use the rest of the reserved pasta water to thin out.
