If you eat breakfast on the go, than you are probably always looking for new recipes to add to your breakfast rotation. This Bacon Egg Breakfast Muffins recipe might be a great one to try out and see what you think. The egg is basically sandwiched between the two layers of the uncooked batter and when it cooks it all gets melded perfectly together. The other way you can do it is scramble up the eggs before you put them in, if you want more of a egg scramble on the inside. You also add bacon and cheese of course, and some scallions for flavour. That is it and then you have a dozen little savoury breakfast bites you can have throughout the week. They apparently last well in the fridge up to 4 days.

These would be awesome to make for a Sunday brunch if you had a lot of guests coming over. So easy to put all of the ingredients in one tin and then pop them in the oven to cook, rather than flipping bacon and booking eggs in two separate pans. Plus, people would be so impressed, and wonder what kind of magic you worked to get the egg in the centre of a cooked muffin! The kids would especially love these too and they would seriously believe that it had to be magic! Eggs are a nutritious choice and this would be a creative way to enjoy them.
