Peanut Butter Cake and Frosting

I don't know about you, but I am crazy for peanut butter. I mean, I like almond butter too...and cashew butter, and really all the nut butters. I even know that almond butter is a healthier for you than good ol' peanut butter, but I just can't help it..I LOVE peanut butter. Remember that song....."ooooohhhh..peanut butter...jelly!" I can hear it in my head and it brings fond memories of playing in the kitchen with my cousins growing up.

When I came across this recipe I knew without even trying it, then I would probably be hooked. The recipe is first adapted from the printed cookbook from Joy the Baker, but we found it through the lovely blog of Stephie Cooks (you will find her link below).

What I like most about this peanut butter dessert is that peanut butter is featured in both the cake and the frosting. The tangy cream cheese adds a subtle balance to the peanut butter that I really enjoyed. If you love the idea of this cake, you could also try making them into cupcakes or a couple of smaller cakes. Of course, any time you are changing the size of a recipe you should keep a very close eye on the baking time so that it does not burn. Generally speaking, the baking time will be less if the size of the cakes are smaller. If you like the cake idea, but are not sold on the double peanut appearance also in the frosting, you could try a basic chocolate frosting (since peanut butter and chocolate are very good friends)...or get crazy and find a berry jam style filling. Whichever way you decide to create this yummy peanut butter masterpiece, you will be very pleased with the final results.
