We all have those days where we just don't feel like going through the arduous process of cooking a grand meal. Sometimes even trying to think of something to make is enough strain... After a long day at work or school, you really need a recipe that can make you a good, hearty meal with minimal effort and in the quickest time possible. So this Thai stir fry is the perfect thing to enjoy after a long day. Thai food is so delicious. And you don't have to wait until you eat out to have it. Thai food is real quite simple to cook at home and usually consists of fresh, healthy ingredients and can be vegetarian or vegan, or have meat in it if you like. It is a very versatile cuisine that makes use of the foods you have on hand in a creative, and tasty way.

The traditional name for this kind of dish in Thai is called Pad See Ew, which is a salty dish made with soy sauce and vegetables, usually served over rice, or, in this case, noodles. Both ways are really yummy. Pad See Ew is much saltier and more savoury than Pad Thai which is what most people think of when they think about Thai food. Pad Thai has more of a sweetness and nuttiness to it as well, because of the peanuts that are used in it. This recipe does call for chicken and egg, but again, there is a Vegetarian and Vegan option for those who do not eat animal products that Nagi, the curator of Recipe Tin Eats created so that everyone can enjoy this meal. Vegetarians and vegans can use some soy based protein or some tempeh which is fermented soy bean protein.

Nagi uses the thick rice stick noodles which would be perfect in this great recipe, for soaking up some of that sauce from the stir fry vegetables and meat. The sauce for the recipe is very easy to make, and is made with sweet soy sauce, white vinegar, sugar, oyster sauce, and some water. The stir fry portion is made with garlic, chicken, gai lan, which is a Chinese broccoli, with thin and tall stalks and smaller florets on the top, and large, broad leaves that can be used in the stir fry and they taste really great with soy sauce. You can usually find all of the ingredients that are included in this awesome Thai recipe in the normal grocery store, or in a larger city; you can definitely find them at an Asian market.

Basically, all the work you have to do is the chopping of the vegetables, and the mixing of the sauce, and then you fry up the chicken and the gai lan with the garlic until it is cooked. The egg gets scrambled next to the chicken and gai lan and then the noodles get added with the sauce until they are all evenly coated in the sauce. Then it is ready to serve right away! See how amazingly easy that is?! Plus it is a healthy meal packed with tons of nutrients and protein. This meal would make for awesome leftovers the next day to bring to work or send with your kids to school. People will think that you ordered take out for lunch with how good this will smell when it is reheated.
