We have to give our deepest appreciation to the woman behind 'The Midnight Baker' website, Judy. She is a--- Midnight baker? As in she bakes at midnight? That's right, young fella. Judy bakes at midnight, and I call her 'Judy: the Great Midnight Baker'. If I lived with this woman, I would willingly turn my midnights into days and days into midnights. *winks* Anyway, Judy is a widow and a retired mechanical engineer who lives in Woodstock in New York. *silence* It's awesome to know that she's into machines and food. *claps* Judy is also a bakeware addict and dog lover. Well, I have that dog lover trait. I hope I can develop that addiction to bakeware soon, just like her. *smiles* Judy bakes at midnight because it is peaceful and relaxing. *silence* I get it now. I study at midnight because it is peaceful and relaxing, and so does Judy. I love her already! *smiles*

Well, now that I've introduced you to Judy, the Midnight Baker, let me give the floor to the world's famous cheeses: mozzarella and cheddar. Mozzarella is a cheese, originally from southern Italy, traditionally made from Italian buffalo milk by the pasta filata method. In 1998, mozzarella receives the Traditional Speciality Guaranteed certification from the European Union. A fresh mozzarella is basically white. It may be yellow at times, depending on the animal's diet. Mozzarella is normally served right after the day it is made because of its high moisture content; however, it can be placed in brine for a week. This type of cheese is commonly used in pizzas and several pasta dishes. We'll have cheddar cheese. Cheddar cheese is a relatively hard, pale-yellow-to-off-white, sometimes 'sharp' tasting, natural cheese. This cheese comes from Cheddar in Somerset, England. It is the second most famous type of cheese in the United States, and the most famous in United Kingdom. Cheddar is deep to pale yellow in color. It can also be yellow orange. Cheddar is rich in vitamin D. By the way, if you love cheese, wine, and beer, you can all go together! *winks*

I won't delay us any longer. Now it is time for you to enjoy! The link to the recipe is found on the "The Midnight Baker" website below.
