Baked Sweet and Sour Chicken with Fried Rice

For the fried rice recipe, you will need some cooked white rice (day old rice works the best), some frozen peas and carrots, chopped onion, and slightly beaten eggs. You should also have some soy sauce.

Preheat your oven to 325 degrees Fahrenheit, and rinse your boneless chicken breasts and cut into bite-sized cubes. Then season the chicken with some salt and pepper. Dip the chicken pieces into the cornstarch until coated, and then dip into the beaten eggs. Now heat up some of the canola oil in a large pan and fry the coated chicken pieces until they are slightly browned, but not cooked all the way through. Then place the chicken in a nine by 13 inch greased a baking pan. Mix the sweet and sour sauce recipe ingredients together in a bowl, and pour evenly over the chicken. Then bake the chicken in a preheated oven for approximately one hour uncovered.
