We found this great, easy, and best of all � simple � recipe for Amish Cinnamon Bread over at Plain Jane's �Life in the Hundred Acre Woods� blog. You're gonna love it because it doesn't even involve kneading. You just mix all of the ingredients together and bake it; that is all!

Traditional Amish Cinnamon Bread was also called �Friendship Bread� because it began with a �starter� that could be passed on to friends so they could make the bread as well. A starter, also known as a pre-ferment, is often used in making sour dough recipes, and it involves allowing yeast to ferment before all of the ingredients of the bread are mixed together. The easiest way to do this is by mixing water with flour and allowing the flour to sit for up to a week, as all flour does contain a certain amount of yeast. The longer the yeast is permitted to ferment, the greater the flavour of the bread!

This starter would be passed along to one's friends along with a sample of the bread. If the friend liked it, she would use the starter to bake her own loaves and pass more starter and another sample along to the next friend. This process is often compared to a �chain letter� where one accepts the starter with the unspoken agreement that she will pass it along. You can imagine how valuable something like this would be in a time when there was little food and bread was a huge commodity � especially cinnamon bread, which is truly a treat!

Traditional Amish Cinnamon Bread, then, originally took days to bake. You can appreciate what a true labour of love it was when you consider all of the time and care that went into it. Thankfully, though, Plain Jane provides us with a much simpler version. And it can still be friendship bread if you make an extra loaf or two to pass along to your friends!

If you've always wanted to try your hand at making an Amish Cinnamon bread recipe, you will want to try this one, it's easy to do, and doesn't require a lot of ingredients. There is no kneading involved, you just mix all the ingredients together and then bake it. For the batter recipe you will need some softened butter, sugar, eggs, buttermilk, flour and baking soda. For the cinnamon and sugar mixture you will need some sugar and some cinnamon, that's it!

Start the bread recipe by creaming together the butter, some sugar and the eggs, Then add the milk, flour, and baking soda. Put about half of the batter into some prepared greased loaf pans. Then mix the cinnamon and sugar into a separate bowl. You can then sprinkle some of the cinnamon mixture onto the top of the batter in each of the two pans. Then add the rest of the bread batter into each of the pans, and sprinkle with the remaining cinnamon and sugar topping. Swirl the batter using a knife. Bake the bread in a preheated 350 degree Fahrenheit oven for approximately 45 to 50 minutes, or until a toothpick comes out clean.
